The Jungle and USDA

Before the United States Department of Agriculture was established the conditions in the different meat companies was disturbing.

The 1906 novel, The Jungle, by Upton Sinclair describes the conditions and work of the meat packing industry.

Prions

Prions are proteins. It’s a sheet and a helix. When cattle are fed other meats it is possible for proteins in their body to misfold due to mutation. When proteins misfold they are capable of transmitting diseases.

The USDA has just confirmed the fourth mad cow disease, also known as BSE, in the United States since 2006. A cow from a California dairy farm was found with BSE. Bovine Spongiform Encephalopathy (BSE) is a fatal disease cows can be infected with from eating other cow/animal byproducts. Luckily, no meat from this cow was taken for food supply, therefore not a threat to human health.

Meat Recalls 2012

The USDA, Food Safety and Inspection Services(FSIS), surveillances the safe production of meats in the US. This organization has already begun recalling 17 meat products in the 2012 year alone. The causes for these recalls vary from pathogens such as Listeria and E. coli to unidentified ingredients and allergens in meats products.

“Pink slime”, referring to the beef scraps no one would choose to eat, are being reprocessed and repurposed and put into peoples hamburger patties.  Chef and food activist, Jamie Oliver, states of the Pink Slime, “ We’re taking a product that would be sold in its cheaper form for dogs and after this process, we can give it to humans.” This pink slime was used by international food chain, McDonald’s, that they recently dropped. His demonstration on his TV show, “Food Revolution”, displayed a technique that is approved by the Food and Drug Administration which involves washing bits of beef in a solution of ammonia and water to kill off bacteria. Oliver says that this practice is being used in 70 percent of ground beef. Oliver considers McDonald’s withdrawal from the use of Pink Slime as a victory, yet McDonald’s states that their decision was not related to any particular event.

Beef Process

Processing is a way to make up for the loss in weight due to trimming of excess fat and bones. During the beef process, every step and safety precaution must be taken into great consideration. Before processing, the beef should hang for at least two weeks.  There are many rules to the beef process and how the beef is handled by the processors can determine the freshness and taste of the beef. The C&C, one beef processing brand, carries out their carcass beef processing on a “hanging weight” basis. To process the beef, the carcass meat is cut into ready to cook proportions and sold by how much it weighs.  After processing, table ready meat weighs less than the carcass did before. Though this loses profit for beef companies it is the best way to ensure that the finished product is of its best quality. The percentage of the weight of the beef lost during processing is 65%.

  • Question: Can Hormones & Antibiotics Be Used in Cattle Raising?
  • Viking Cattle Company: Antibiotics may be given to prevent or treat disease in cattle. A "withdrawal" period is required from the time antibiotics are administered until it is legal to slaughter the animal. This is so residues can exit the animal's system. FSIS randomly samples cattle at slaughter and tests for residues. Data from this Monitoring Plan have shown a very low percentage of residue violations. Not all antibiotics are approved for use in all classes of cattle. However, if there is a demonstrated therapeutic need, a veterinarian may prescribe an antibiotic that is approved in other classes for an animal in a non-approved class. In this case, no detectable residues of this drug may be present in the edible tissues of the animal at slaughter.
  • Hormones may be used to promote efficient growth. Estradiol, progesterone, and testosterone (three natural hormones), and zeranol and trenbolone acetate (two synthetic hormones) may be used as an implant on the animal's ear. The hormone is time released, and is effective for 90 to 120 days. In addition, melengesterol acetate, which can be used to suppress estrus, or improve weight gain and feed efficiency, is approved for use as a feed additive. Not all combinations of hormones are approved for use in all classes of cattle. Hormones are approved for specific classes of animals only, and cannot be used in non-approved classes.
